2 Ripe green-skinned plums,
  Halved and pitted

BATTER: 3/4 cup all-purpose flour 1 tsp baking powder 1/8 tsp salt 1/2 cup low-fat (1%) milk 1 Tbl stick margarine or butter, melted 1 tsp grated orange rind 1 tsp vanilla extract 2 large egg yolks 4 large egg whites 1/2 cup sugar

Preheat the oven to 350F.

Melt the 2 tablespoons of margarine in a 9-inch cast-iron skillet over medium heat. Add 1/2 cup of sugar and the liqueur; cook until the sugar dissolves. Remove from the heat. Arrange the plum halves, cut sides up, in the skillet.

Lightly spoon the flour into a dry measuring cup and level with a knife. Combine the flour with the baking powder and salt in a bowl. Add the milk, 1 tablespoon of margarine, the orange rind, vanilla and egg yolks in another bowl, stirring with a whisk until the batter is smooth.

Beat the egg whites at high speed until foamy. Gradually add 1/2 cup of sugar, 1 tablespoon at a time, beating until stiff peaks form. Gently stir one fourth of the egg white mixture into the batter, then gently fold in the remaining egg white mixture.

Pour the batter into the skillet, spreading evenly over the plums. Bake for about 45 minutes, until a toothpick inserted into the center comes out clean. Cool for 5 minutes in the skillet. Place a plate upside down on top of the skillet, then invert the cake out onto the plate. Serve the cake warm or at room temperature.
